I found this recipe on “funky food allergies” and had to share since it’s SO yummy.

I’ve tried the bread, tortilla and oatmeal cookie recipes from the same site with not so good results.
Almond Cookie Recipe
3/4 cup almond butter
1/2 cup sugar
1/2 cup brown sugar
1/4 cup applesauce(or any fruit puree)
1 tsp vanilla(keep with the theme and try almond extract)
1/4 tsp cream of tarter
1/4 tsp baking soda
1 1/2 cups almond meal
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
Preheat
oven to 350. Cream almond butter and sugars together. Add in
applesauce and vanilla. Blend in almond meal and remaining ingredients.
This dough should be cookie dough consistency but will be sticky.
Roll teaspoon size balls with your hands and then roll them in more
sugar and cinnamon. I used turbinado because it’s so pretty. Place on
silpat lined baking sheet and press with fork to flatten out a little.
Bake for 8 minutes or until brown around the edges.
(personally, I’ve used baby food pears for the applesauce since DD can’t tolerate apples. Also, I’ve no silpat, so I just cook them on the cookie sheet. Make sure to mush them down a little or the centers won’t get cooked). Hopefully everyone will be able to eat this!
