Pillsbury refrigerated pie crust
1 10 oz package of mixed vegetables
1/2 cup chopped onion
1/2 cup fresh mushrooms
1/4 cup margarine (Fleishcmann’s Unsalted or Nucoa)
1/3 cup flour
1/2 tsp salt
1/2 tsp dried sage, marjoram or thyme, crushed
1/8 tsp pepper
2 cups Swanson’s Natural Goodness Chicken broth
3/4 cups plain enriched rice milk
3 cups cubed chicken or turkey
1/4 cup snipped fresh parsely
Cook mixed vegetables according to package directions and drain. In a saucepan cook onions and mushrooms in margarine until tender. Stir in flour, salt, sage, marjoram or thyme and pepper. Add chicken broth and rice milk all at once. Cook and stir until thick and bubbly. Stir in mixed vegetable and chicken and parsely and heat through. Put pastry in pie crust, fill with chicken mixture and top with other pastry. Bake at 450 for 30 minutes or until golden brown.
