we make the pumpkin muffin recipe out of our old better crocker cookbook and we add chocolate chips to it—this is one of our favorites. we double the recipe and add about 1 tsp. of xanthan gum. we used 2 cups of bette hagman’s featherlight mix and 1 cup of sorghum flour,we brought them to our first informal celiac groupl meeting tonight. i think one of my girls said one of the non-celiac kids ate about 5 of them.

3 cups rice flour3 cups tapioca flour3 cupscornstarch3 tablespoons of potato flour—-not potato starchmix it all together really well and you can use it cup for cup in wheat flour recipes—-with the addition of xanthan gum, of course.brown rice flour can be used which is a littlemore nutritious.we also like to use part sorghum flour in recipes instead of straight featherlight mix because sorghum has so much more nutrition.when i get time, i can tell you some other mixes we use, if you are interested.we also buy some guaranteed gluten free oats for our kids and make a really good baked oatmeal. the oats are kind of pricey since they are guranteed to be safe,, but i feel like they are worth the money.one of the gals showed us a product called muscle milk last night that has gluten free flavors—-she said it can be bought at costco.christinekevieb2007-11-25 11:55:08

I have an awesome pizza crust recipe that Liam when he is in the mood will eat and the other kids not gf will eat also. I am definently intersted in other recipes you have for mixes.

We like their tapioca rice bread and LOVE their pancake mix. We just add Natur-a rice milk as a milk replacement when making the pancakes and they turn out great! Apparently their KinniToos cookies are much like Oreos (I’m waiting for my order to arrive – haven’t tried them yet) and they have a breading batter that I’ve ordered as well to make my own chicken fingers. I haven’t quite perfected the homemade GF chicken finger breading, so I’m looking forward to that one coming in my order as well!
