InactiveSo I’m trying new foods and recipes and ideas since Marisa is trying to eat
more finger/table foods but refuses many of them or doesn’t like the texture
or they hurt her gums (teething badly). Tracy – I did try the Dinosaur
nuggets but she doesn’t like them – she seems to like Purdue ones the best.
Anyway, a friend of the family suggested i might marinate chicken cutlet in
buttermilk and then bake with some spices – so it should come out tender
but not too gooey/slimey. So I have a cutlet sitting in some buttermilk in the
fridge now and will bake it during M’s morning nap. What spices might work
and make it taste nice? Any other ideas for this in general?

Keymasterme, i love garlic…maybe something sweet, too? just a dab? like some all-fruit (jelly/jam) or something?

InactiveBut will the jam make it feel slimey? She won’t pick it up/try it if it does… So
should I bake it still sitting in the buttermilk and then when it’s cooked take
it out and dry it off a bit and cut it into cubes?

KeymasterI don’t think a dab of jam will make it any more slimey than the buttermilk? maybe bread it? you can then cook in a pan or bake in the oven… hellbennt2006-8-24 9:35:58

InactiveI make breaded chicken cutlets all the time. It’s a family tradition in my family. I tell my girls they are chicken nuggets and they love them. I never used buttermilk, but dip them in egg (I’m sure buttermilk would work, too) then coat them lightly with seasoned breadcrumbs. My secret to making them really yummy is adding some grated parmesan or romano cheese the the breadcrumbs. Then I bake them with some olive oil. (You can pan fry them as well). If you cook them long enough, but not too long to dry them out, they won’t be slimy.

InactiveWhat about making the chicken, cutting it into bite size pieces and then put half in front of her with jam and half without. Alternate the texture/tastes maybe? For example, let her feed herself a dry piece, then you give her a jellied piece, repeat. Then see once she get’s a taste of the sweetness, if she will start to pick it up on her own. Maybe that will help her get over the texture issue? Just a thought.
I’m sorry you had to buy those nuggets and she didn’t like them. They are a little garlicy.

InactiveThanks guys. My cable/Internet connection went down this morning so I just
saw these now – I ended up just baking a cutlet soaked in buttermilk
(marinated for 4 hours first) and with some paprika and onion powder and
garlic powder. Came out SOOO good and tender but Marisa wouldn’t even
touch or try it. I think her teeth are really bothering her – she has 6 through
and looks like more on the way and that always really makes her even
pickier than normal. But I’ll try the jam and also the breadcrumbs/cheese
and all. Tracy – she won’t let me feed her anything that isn’t puree – other
than a cheerio sometimes. Don’t worry about the nuggets – I end up trying
SO many things that don’t work.
