Keymasterwell, you could try almond butter or something? maybe peanutbutter if you’re trying to figure out if it’sthe ‘main’ things like milk/soy/wheat?
blackstrap molasses is full of calcium & iron- not the tastiest but I don’t see how adding sugar to it would hurt?
maybe cinamin toast? olive oil, sugar & cinamon?

Very good points Laura. I hadn’t thought of any of that stuff.
Does anyone have any ideas on what to put on rice bread? This is my first time buying it and it is horrible. I thought I could just toast it and it taste like regular bread, but that just didn’t happen.

my MIL doesnt eat wheat or dairy, and she hates rice bread. she uses wheat free waffles for everything-sanwhiches, pizza, toast, you name it. maybe you can try those?

InactiveWe tried Rice Bread for other reasons, and it is horrible

I was happier with rolling up turkey and cheese with a tomato and skipping the bread. Like Laura suggested, they make those potatos and sweet potatos already wrapped in a microwaveable seal, so you just pop it in the microwave and have a baked potato in like 8 minutes. They are really good, too.
They also make those rice packets that you can do in the microwave in 90 seconds. They are OK but I would check the ingredients.
At least when you are at home, too, you could do those “steamfresh” veggies that they sell in the frozen section. They cook in the microwave in 5 minutes. For quick dinners, I do the microwave rice and then a steamfresh microwave veggie and just cook some chicken or something easy and then there is almost no cleanup either.
(OK, I think I have admitted before about my non-domestication, but it is really clear now!)

InactiveGREAT ideas ladies. I actually tryed my potatoe with some oil at lunch. It was actually good. Last night I had a potatoe with nothing, but salt. It was so dry. Yuck! I am excited to try the things you have mentioned. Also, Natalie I am going to go look for the waffles. Yeah! something else to eat.

InactiveShelby,
Where in VA are you going? I’m from there and have travled there
a lot on the diet. That said, where do you live now? Do you
have a trader joe’s or whole foods in your area? I have ttraveled
with so much food, it’s not funnyu. Rice crackers, also cooked
chicken, rice, peas, apples, bananas, fruit roll things (whole fruit)
and rice milk and apple juice….I can’t thik what else right now. I
use those freezer packs in thermal things taht go into diaper bags or
other bags. Rice milk comes in little boxes, too, like juice
boxes, but they might not let you travel with it (I’m not clear on the
current regs with liquids for adults). I’ll try to compile some
ideas for you in one place– maybe tomorrow?I use veggie stock and chicken stock for both chicken, turkey
and rice. I use olive oil and grapeseed oil and canola oil in
cooking nad baking. There is really SO SO SO much that you can
eat on this diet, it’s just getting used to it and FINDING it. I
use gluten free waffles for EVERYthing. The rice bread I found
was horrible nad I made my own for a while from a mix and even taht
wasn’t so good. Trader Joe’s sells gluten free banana waffles and
Whole foods might have the VAn’s wheat free dairy and soy free waffles.
These are great to act as toast and as sandwich bread. I just got
out of the habit of having bread, but there’s a lot more to say.
I’m rushing out the door, so I’ll write more later.I’m so glad to hear you are going to try this. It’s what changed
our lives, dealing with the food issues in conjunction with his
reflux. It was a two part problem that required a two part
solution in order to solve things.more later,

InactiveWe will be in Fairfax VA. My SIL says there is a Trader Joes there. We are in Franklin Tn and there is a wild oats here that I go to. I am very excited to go get some of the waffles.
By the way, wouldn’t you know it is the ener g rice bread that I got. I took Laura’s suggestion and added oil, cinnamon, and sugar. It was still a little bland so I added some honey. I could get it down that way. It was still gross, but at least I could get it down. Funny enough Luke actually liked it. I looked at the sandwich turkey meat that we have and it has stuff in it that I can’t eat. I guess I will have to get turkey from the deli. Is it possible the deli meat may not be okay either? A lot of stuff has cacinate in it. Sorry I’m sure I didn’t spell that right. It is a milk thing.
Okay, another question. We are going to see my husbands family in a few weeks. It will be 11 people that will be eating. I’m not sure how to deal with cooking something for myself. Any ideas? The only thing I can think of is to check out those rice bowls to see if there is some of those I can eat for dinner. As far as lunch we all usually just do our own thing. Hopefully before we go I will be able to add a few things in.
You are all so great! I can’t thank you enough.

Keymasteri would be careful of ‘regular’ lunch meats- nitrates, food colorings, etc
ask the meat-counter person what is ‘safe’ at wild oats, trader joes, etc

not sure about honey?…
ps: as you get closer to the dinner, I’ll help you w/ some ideas

InactiveMaybe just buy a small turkey breast and throw that in the oven for yourself. You can bake a sweet potato or have some rice with it. Then you can make sandwiches from it later.
January 31, 2007 at 12:13 pm #23617Anonymous
InactiveOr, you could offer to cook for all 11:
Spiral Ham, salad, steamed veggies, oven roasted potatos with oil salt and pepper…..
Turkey breast, Rice, Steamed Veggies, Salad
Baked Chicken Breast with Oil, Vinager, Salt Pepper and Parsley with similar sides
Beef Roast with Garlic, Oil, salt, pepper and similar sides,
Large Salad with Roasted Peppers, Artichokes, Olives, Chick Peas, lettuce, cucumbers, grape tomatoes, sliced chicken breast, Oil, vinager…
Pork Tenderloin (roll in cracked pepper, crushed garlic, salt) Fry for 20 minutes, and then bake in the over until done (this is one of our family favorites and very good!) We sometimes even cook it and eat it cold later….
OK, I am rambling now…….

InactiveWhat about ground turkey? My family uses that instead of ground beef. You could probably do a lot with that…
January 31, 2007 at 4:42 pm #23640Anonymous
InactiveYes, I use ground turkey a too. You can make pretty good turkey burgers with them, or turkey meatballs/meatloaf.
Also, I forgot to mention something else that may help with travleing. I’m not sure what fruits and veggies you can have in the first two weeks, but check out the great selection of dried fruits, berries and veggies at http://www.justtomatoes.com/ These would be great for travel since they do not require refrigeration. They’re not very filling as far as a meal goes, but they might be a good snack for you.

InactiveShelby,
Glad you are going to Fairfax, they have everything. I’ve been to rural areas that make it much dicier to find these stores. Try Trader Joe’s banana waffles that are gluten and dairy free. Also try Trader Joe’s Cuban Mojito simmer sauce– it’s VERY GOOD!!!! We simmer chicken, add to rice and black beans and have peas or some other green veggie and it’s a meal. For smoothies — we have these at breakfast time a lot: a cup of rice milk, a banana, and any berry: strawberries, raspberries, blueberries, etc. Also for dessert at trader joe’s get the Good Karma Rice Vanilla “ice cream” in the pint size. Or try the Belizza Acai Banana Sorbet, it’s great!! Get yourself some Gorilla Munch, Panda Puffs or Amazon Flakes, whichever one they ahve at Trader Joe’s there– and you can have cereal. You are so lucky to have a wild oats near home, I cna give you lots of ideas from there as well (for when you’re back home).
I would personally skip the deli meats nad just buy chicken breast fillets fresh or frozen (or turkey) and then fix several at once in chicken or veggie broth with olive oil, (refrig or freeze some) and use the rest on sandwiches. BEfore we went wheat nad gluten free my favorite meal was wheat bread, avacado and turkey. I got the whole family on a turkey and avacado sandwich kick when we visited. Trader Joe’s original plain hummus is good as well.
For the group meal, are you fixing it for everyone? I would stick to some kind of meat, rice and veggies, with a green salad (spinach or mixed greens) that’s got a oil/vinegar dressing (use cucumber and sunflower seeds and you could use goat cheese on the whole thing and keep your portion free of the cheese). For dessert you can have cut fruit or gluten/dairy/soy free cookies or brownies. We’ve had people over and fixed food for friends and they have been pleasantly surprised. Our best meal for a crowd where they were truly surprised was coating chicken breasts in wheat/gluten free flour and egg, frying it, making rice and veggies. Our friends expected to gag I think, on our special diet food, but they all loved it.
I’ll send more ideas, I’m just so happy you are in fairfax. When/if you are eating eggs, we had fried eggs with chopped spinach in it forever as our breakfast.
I also suggest that you avoid making multiple meals at all costs. My husband knew that he had to get used to the weird food, or make his own, or eat cereal. I know you can’t do that with your other child, but I’m sure your dh can deal for a while so you can figure this out without making 16 meals a day for each individual in the family. Your older son might like the smoothies and waffles, and even some of hte cereals, too. That’s just my two cents. I know everyone has their own family needs, but at a time like this you are in serious survival mode– and you’re already not sleeping, so the energy you do have should be devoted to getting through the day…. (and a little aside, my husband’s cholesterol dropped 30 points during the year we were eating dairy free and not buying dairy products– I am NOT exaggerating!)
Happy eating!! Ask if you have more questions.

InactiveNorthern Virginia has a Trader Joe’s and there are a bunch of Whole Foods as well. The Vann’s wheat free waffles are great. So is the Gorilla Munch cereal. We keep a box of it at daycare for Kaelyn for snack and her teachers say that they find themselves wanting to snack on it.
