mini paleo (grain free) pancakes!
1 really ripe organic banana
1 organic pastured egg
[Egg substitute works as well:
3T water with 1T chia seeds. Sit in fridge 10-15 min and: ]
2 tablespoons cassava flour
1 teaspoon of chia seeds
1/2 tsp raw honey
1/8 tsp cinnamon
tiny dash of celtic sea salt [or this! RealSalt ]
Use a teaspoon to drop circles into pan with a lot of fat already very hot but then continue cooking on med-low heat.
I use a mixture of half coconut oil/half grass fed butter.
The above recipe makes double the amount of pancakes you see in the dish.
