I adjusted a recipe for waffles (found at http://www.bobsredmill.com/recipe/detail.php?rid=750) and have thoroughly enjoyed having a ‘bread’ these past few days.
If you are on basic TED and can have rice, potato, rice milk, xanthan or guar gum, baking powder, baking soda, sugar, salt, and oil, you should give these waffles a try. If you can’t do potato or you can’t do rice, you could try other flours and starches – tapioca, amaranth, arrowroot, sorgum, etc.
I’ve been playing around with various rice/potato/amaranth flour mixs and have definitely found it much better to use a combination of flours than just one flour. Based on advice from a Celiac baking forum, I make a batch of about 3 cups of various flours as my “all-purpose flour” and then pull from that bin the specific amount that the recipe calls for. Here’s what I used for my 3-cup bin of “AP flour” for these waffles:
1 cup white rice flour
1 cup sweet rice flour (I finally found this at an Asian grocer)
1/3 cup potato flour
2/3 cup potato starchNOTE: I also tried making the waffles with an AP flour mix of:
2/3 cup white rice flour
2/3 cup sweet rice flour
2/3 cup brown rice flour
2/3 cup potato starch
1/3 c amaranth flour
but I found that this combination was too strong tasting for me. It was probably due to the brown rice flour and the amaranth flour. So I tried the combination above and liked the flavor of the waffles better.Almost-basic-TED Waffles Recipe
- 1-1/2 cup All Purpose Flour mix (see above)
- about 2 teaspoons xanthan gum (I’ve been advised to use 1-1/2 teaspoons per cup of flour in my baking since I’m not using any of the normal proteins – gluten, egg, or milk. The xanthan gum really helps to keep the baked goods intact!)
- 1 Tablespoon sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg (or substitute*)
- 1-1/2 cup milk (I used rice milk)
- 1 Tablespoon oil
1. Blend all ingredients in blender or whisk vigorously in bowl until thoroughly blended. Let batter sit for five minutes.
2. While batter rests, preheat waffle iron according to manufacturer’s directions. (Adjust temperature setting after cooking first waffle.)
3. Lightly oil hot waffle iron, if necessary. Pour 1/4 of batter (or manufacturer’s recommended amount) onto heated waffle iron. Close and bake until steaming stops and waffle is deeply browned, about 4-6 minutes. Repeat with remaining batter. Makes 4 waffles, 8 inches each, depending on waffle iron size. Serves 4 (1 waffle per serving).
*I used the Ener-G egg replacer for these waffles but I’ve also tried using other egg substitutes. Here’s a great link for info on what you can use in place of eggs. http://www.dummies.com/WileyCDA/DummiesArticle/id-1081.html
Toppings
I put some Smart Balance Light margarine on the waffles and then a bit of brown sugar. Once the margarine and the sugar melted, it was a bit like syrup. (I don’t happen to have any syrup in the house at the moment, plus I haven’t trialed it so I went with this as an option I know is OK.)
I also put a bit of apple butter on them and that was good, too.

Hi,
I was just wondering the best celiac cookbook you’ve come across? I guess I have been in denial on some level as I haven’t yet bought a specialized cook book. But Lucas isn’t outgrowing these intolerances and I need some new ideas. He’s also got dairy/soy and beef problems, and can’t do acidic things like tomato– so we’re limited in a lot of ways. but I think it’d be worth it at this point to find some additional recipes.

Topic: Update on Kendra
Hi all,
i’ts been quiet a while since i visited the site. I bet i missed a lot!We have had quite a week. We went to see the Ped GI last wesnesday and we left dissapointed. I really had high expectations; It might sounds unrialistic i know, but i was really hoping Dr. A will be solving all Kendra’s feeding problems. He took a look at Kendra and told us the same thing our ped has told us: “she has a severe oral aversion”. He wrote us a prescription for OT/SP and I left defeated and descorouaged. i had pesimistic thoughts for while “My baby is just going to have this feeding problems for ever”.
We came home and the next day (thursday March 15th) took our older dd to Disney for her 5th birthday as we have promised her before Kendra was born. It was a VERY stressful trip b/c of kendra’s feeding issues, but we manage to make it fun for Melanie. We came home early monday morning and kendra was sick with a cold and was drinking less and less. took her to the ped and found out she has lost 7 OUNCES in 4 days! i broke down in tears at the ped office. I just felt so upset. It takes us about a month to get her to gain that much, and she lost it in 4 days!
I think it wa good i cried (even though it was not intentionally) b/c the ped really paid attention to Kendra feeding problems at that point. She ordered all kind of test including allergy test (celiac, and other wird ones) and refered us to an allergist (we go to see him April the 11th). Some of the test came back negative and some she said the allergist will be discussing with us in our apppointment.
Since kendra has lost so much weight and there was no WAY of making it up, she admitted her to the hospital and placed a NG tube in. They told to stop the Breast milk and started her on pregestimil ( iam still pumping until i know for sure there is a severe allergy problems). While in the hospital they fed her every three hours around the clock. The poor thing was exhausted from no sleep and terrified of the nurses and doctors who came in to see her. She looked a t me every time , like “mommy who are these people and what are they doing? so sad.
We were in the hospital for two days and while there i was taught how to feed my baby through a NG tube. Never in my wildest dreams, i thought i would be doing something like that with my child.
I know is not the end of the world and i am thankful that she can get some nurishment some how, but i was really hoping she would get better. We are meeting with a Pediatric Surgeon next wesneday to discuss a G-Button, since her feeding aversion would take time to overcome. So there is where we stand now. We have a NG tube and we start OT hopefully Tuesday, just to work with her sensory problems, but not food until they place the button.i guess i have lost of questions for all those brave moms who children get their main nurishment thorugh tube feeding.
1.What’s the best button to get placed (Bard, Mickey)?
2.i am sure the Ped sergeon will give me some info about that, but what does this work? they get the surgery first to place the tube, then a few weeks later she get the button? what are the discomfort of this surgery? complications? ( i am researching like crazy now, but your experinces its very important to me)
what else should i be asking?

Our allergist says to try reintroducing foods every 6 months. I hate doing it, but he is hopeful that Lucas will tolerate some of these foods by age 4 or 5. So we follow a diet that someone with celiac would be on, and we’re very strict about it. I treat it as if he had celiac or a full blown allergy because his reactions are so severe. His reactions, however, are very behaviorial and involve not being able to sleep and I assume severe gi upset. No rashes or raspy breathing or other obvious signs– just a lot of screaming and crying and writhing around for many many hours.
Sleep trouble and weight gain are both classic reflux problems, I would say because their esophagus’ get damaged and they are in pain adn sometimes associate pain with eating and there starts the problem. Are you nursing? Does he look healthy to you? Does he seem happy generally?
